Howard Lyman (WA)

Saving the Earth One Bite at a Time

Howard F. Lyman is a 4th generation family farmer (and vegan) from Montana. After 20 years of operating a feed lot, he sold his ranch and started working for farmers in financial trouble. He was a lobbyist in Washington, and ran for Congress in 1982. He is the former Director of the Beyond Beef Campaign & the Humane Society of the United States Eating With Conscience Campaign; past President of both the International Vegetarian Union, and EarthSave International; and is currently President of Voice for a Viable Future. Howard travels over 100,000 miles every year as a speaker and lecturer. A Feature Documentary on his life is now available on DVD, and recently, Howard's new book, No More Bull! was published to wide acclaim. He currently lives in Ellensburg, Washington, with his wife Willow Jeane, and his cat, Ceasar.

Caldwell B. Esselstyn, Jr. (OH)

Arrest and Reversal: The Preferred Treatment of Coronary Artery Heart Disease

A retired Cleveland clinical surgeon, Dr. Esselstyn conducted a 20 year study of coronary artery disease using diet and lifestyle modification. In 1991 he organized the first national Conference on the Elimination of Coronary Artery Disease. Dr. Esselstyn also chaired a follow-up conference, the Summit on Cholesterol and Coronary Disease. In April 2005 he became the first recipient of the Benjamin Spock Award for Compassion in Medicine. His newly released book Prevent and Reverse Heart Disease relates to results of his 20 year study on curing heart disease with diet.

Ann Crile Esselstyn graduated from Smith College and received a Masters in Education from Wheelock College. She taught English and some history for 27 years. Through the years she juggled 4 children, teaching, and figuring out plant-based, oil free ways to cook. She stopped teaching in 2000 and focused on creating the recipes to prevent and reverse heart disease

Steve Meyerowitz was christened "Sproutman" in the 1970s in a feature article in Vegetarian Times because his New York City apartment was always filled with gardens of mini-vegetables. George Eisman, RD (NY)

How a Plant-Based Diet Can Lower Cancer Risk and Help the Environment

George Eisman has been a Registered Dietition since 1978. He is the founder of the Association of Vegetarian Dietitians and Nutrition Educators, and co-founder and first Chairman-Elect of the Vegetarian Nutrition Practice Group of the American Dietetic Association. He has worked as a dietitian at Miami Children's Hospital and Mount Sinai Medical Center in Miami Beach, and at Wesley Woods Nursing Home in Atlanta, before serving as a Public Health Nutritionist for the State Health Departments of Florida, Georgia, and North Carolina. He has taught nutrition at the college and university level for over 20 years, having served as a faculty member at Florida State University, Broward Community College and Miami-Dade Community College. He is the author of The Most Noble Diet; Don't Let Your Diet Add to Your Cancer Risk, and A Basic Course in Vegetarian and Vegan Nutrition. In 1993 he was inducted into the Vegetarian Hall of Fame by the North American Vegetarian Society.

Kathy Stevens (NY)

photo Kathy Stevens, Founder and Director of Catskill Animal Sanctuary, spent her childhood on a Virginia horse farm, years that instilled in her a deep love of and respect for all animals. Yet she also saw the ugly side of an industry that uses animals as commodities. Little did she know how such a childhood would shape her future. Kathy received her masters degree in Public Policy from Tufts University, then spent eleven years as a high school English teacher. In 2000, she was invited to become the principal of a new charter high school. Instead, one year later, she opened Catskill Animal Sanctuary. In a few short years, CAS has become one of the nation's leading sanctuaries for farmed animals, and with the launching of its children's camp and vegan cooking program, a powerful voice for compassionate living. Kathy's first book, Where the Blind Horse Sings, shares the life-changing lessons learned from a blind horse, a sheep, and a rooster, and received much critical and popular acclaim. It is available in paperback on Amazon. Her second book, Animal Camp, will be released in August 2010. Kathy lives behind the barn with her dog Murphy and her cats Fat Boy and Mouse.

Inspiring Compassion

Matt Rice works as Mercy For Animals' New York Campaign Coordinator, organizing events and campaigns, and coordinating volunteers throughout New York City and the state. He has more than six years of experience in the animal protection movement managing successful international corporate campaigns, developing educational materials and websites, and coordinating public outreach and fundraising events. In addition to helping consumers make more informed decisions, his efforts have convinced several leading clothing retailers and fashion designers to switch to animal-friendly fabrics and have helped garner international media attention about animals who are killed for their fur, leather or wool. Coordinating cutting-edge and thought-provoking demonstrations in cities around the world, Matt has conducted interviews with local, national and international media outlets reaching millions of people on a wide range of animal rights issues. He has given presentations on effective animal advocacy, humane education and other topics at colleges, high schools, public libraries and other forums and has helped recruit, manage and train volunteers, interns and staff for some of the nation's leading animal protection organizations.

Milton R. Mills, M.D., serves as Associate Director of Preventive Medicine for the Physicians Committee for Responsible Medicine (PCRM), a North American group of doctors and laypersons dedicated to promoting improved health care, better and more appropriate nutrition, and higher standards in medical research. Dr. Mills practices outpatient clinic-based medicine in Northern Virginia and works as a Critical Care physician with Fairfax Hospital in Fairfax, Virginia and United Medical Center in Washington DC. His varied experience specializing in Internal Medicine and HIV disease, and in the relationship between nutrition and chronic diseases has made him extensively knowledgeable about the unique healthcare needs of minorities, the challenges of practicing medicine in inner cities, and the special medical and nutritional requirements of HIV+ and AIDS patients. As an African-American physician focusing on preventive medicine, Dr. Mills has delved into some of the environmental and societal influences affecting the health of African Americans and other racial/ethnic minorities. Dr. Mills has lectured and given research seminars across the United States and in Mexico and Canada on such topics as the negative impacts of meat and dairy consumption on human health; nutrition and HIV/AIDS; nutrition and cancer; and the dietary needs of various ethnic groups

Recipes (and tastes of them!) will be included. You do not have to sacrifice taste or feel deprived- these recipes and tips are sure to be a hit with everyone! Kelly Serbonich has an A.A.S. in Culinary Arts, a B.S. in Culinary Nutrition and a M.S. in Holistic Nutrition. She was the Executive Chef of the Hippocrates Health Institute and co-authored their raw food preparation manual,* Healthful Cuisine*. Kelly is also the contributor for 4 Permacharts on the raw food lifestyle. She currently cooks for the Moosewood Restaurant and is mother to a 4 1/2 year old son, Noah.
